The best spring rolls are handmade, according to Kemio. Whenever the Japanese Internet sensation returns to Japan to visit his family, he looks forward to his grandmother’s signature variety, packed with ground pork, bean sprouts, and garlic chives, and wrapped in rice paper. “She waits for me to arrive with the spring rolls ready,” he tells Family Style. “It’s kind of my homecoming tradition now.”
Ingredients
- 5¼ ounces ground pork
- Bean sprouts
- ½ bag of nira (“garlic chive”)
- 1 package of spring-roll wrappers
- Seasonings: salt, pepper, a small amount of sugar (for her little secret of sweetness)
- Katakuriko (“potato starch”)for thickening
Instructions
- Stir-fry the ground pork, bean sprouts, and garlic chives in a pan.
- Season with salt, pepper, and a touch of sugar as a secret ingredient.
- Add a small amount of potato starch to thicken the mixture.
- Once the filling has cooled, wrap it in the spring roll wrappers.
- Fry the rolls in a small amount of oil until golden brown.
